Ingredients:
· 500g Sugar · 200g Egg whites · Zest of 1 lemons · 100g Almonds *This recipe can also be viewed as an Instructable* Preparation: 1. Separate the yolks from whites until you arrive at 200g of whites and place them in a mixing bowl. a. Add sugar to the egg whites. 2. Heat a pot with water and place the mixing bowl in the heating water. a. Stir the egg/sugar continuously while wiping down the sides of the mixing bowl. You will be done when most of the sugar has been dissolved in the egg whites which you can check by rubbing the mixture between two fingertips where you should only be able to feel a few grains of sugar. Also, the mixture should be white and glossy. *the water should be warm enough to dissolve the sugar but not cook the eggs. 3. Whisk the mixture with an electric mixer or 2 forks (although with two forks the mixing time could be as much as 2 hours) until you get hard peaks. 4. Fold the lemon zest into the mixture. 5. Fold the almonds, cut into flakes or julienne strips, into the mixture. 6. With a spoon take a golf-ball sized portion of the mixture and place onto a baking sheet covered with parchment paper. a. Form the pyramids out of the mixture using a spoon, spatula and/or fork. 7. Place the baking sheet near the bottom of a preheated oven set to 100°c/210°F for 1 hour. *cover another baking sheet with aluminum foil and place below the heating element at the top of the oven in order to keep the Bianchini white on top while still allowing them to fully harden. Preparing the Mushrooms: 1. Fill a piping bag with the beaten egg/sugar/lemon-zest mixture. a. Pipe directly onto a baking sheet covered with parchment paper in order to make equal amounts of mushroom caps and stems. b. Sprinkle just the mushroom caps with cocoa powder. c. Bake caps and stems at 100°c/210°f for ½ hour. 2. Prepare the melted chocolate. a. Melt the chocolate in a double boiler. b. Use the chocolate as a glue to join the mushroom caps to the stems. 3. Eat! |

· 500 grammi zucchero · 200 grammi di albumi d’uovo · 1 limone grattugiato · 100g mandorle Preparazione: 1. Si deve preparare inizialmente una cottura a bagnomaria. a. Prendere una pentola e riempirla per circa un quarto con dell’acqua. b. Mettere la pentola su un fornello medio e farla riscaldare (non deve bollire) 2. Prendere un contenitore più piccolo della pentola che è sul fuoco, mettere dentro 200 grammi di bianco d’uovo e 500 grammi di zucchero frullare con una frusta elettrica (o con 2 forchette) fino a sciogliere lo zucchero. a. Mettere il contenitore con il composto dentro la pentola con l’acqua calda e continuare a girare con un cucchiaio di legno. b. Continuare a girare fino a quando si otterrà una buona consistenza. *Suggerisco di far attenzione alla temperatura dell’acqua, perché non deve bollire. Quando è troppo calda aggiungere poca acqua fredda, per non far scendere troppo la temperatura. L’acqua deve contribuire a far sciogliere lo zucchero, ma non deve cuocere gli albumi. 3. Quando il composto avrà raggiunto un ottima consistenza, togliere dall'acqua calda e fare freddare un po'. È possibile utilizzare le fruste elettriche o 2 forchette (sebbene con l’uso delle sole forchette il tempo necessario per ottenere una buona consistenza potrebbe arrivare a 2 ore). 4. A questo punto, aggiungere la scorza (buccia) del limone grattugiato. 5. Le mandorle precedentemente tagliate a listarelle o anche le scaglie di mandorle tagliate a metà. 6. Con un cucchiaio prendere un po’ di composto, approssimativamente delle dimensioni di una pallina da golf, metterlo in una teglia, precedentemente ricoperta con carta forno. 7. Formare delle piramidi con la superficie frastagliata. 8. Mettere in forno precedentemente riscaldato a 100°c/210°f per 1 ora. Preparazione Funghetti: 1. Riempire una sac à poche da dolci per guarnire con il compost. 2. Formare dei piccolo ciuffi, e dei chiodini (la parte più lunga del fungo). 3. Sistemare il tutto direttamente su una teglia ricoperta di carta da forno. 4. Spolverare solo I ciuffi con cacao amaro. 5. Infornare a temperature 100°c/210°f cottura ½ ora circa. 6. Preparare il cioccolato fuso: a. Fondere il cioccolato a bagnomaria. Mettere l'acqua in un pentolino e riscaldare su un fuoco medio. b. Utilizzare la cioccolata come collante per unire il gambo al cappello del fungo. Fine! |
