Ingredients:
· 1kg Flour · 100g Sugar + some for rolling · 1/2l Milk · 100g Margarine · 50g Brewer’s Yeast · Vanilla extract in powder or liquid form · Zest of 1 lemon · Zest of 1 orange · 4 Eggs · 16g Baking powder · 1 bottle Alchermes Liquor · ½l of Peach jam Preparation: 1. Measure 1kg of flour. a. Add vanilla flavor (if using a powder) and baking powder to the flour. 2. Warm milk over low heat. 3. Break up brewer’s yeast in a bowl. a. Pour milk over the brewer’s yeast until just covered. b. Stir until yeast is completely dissolved in the milk. 4. Melt butter over low heat until the consistency similar to a custard of pudding. 5. Mix the eggs, zest, and sugar. 6. Create a well in the center of the flour and pour in the egg/zest/sugar mixture. a. Combine by pulling from the underneath/back of the bowl. 7. Add margarine to the flour/egg/zest/sugar mix. a. Combine by pulling from the underneath/back of the bowl. 8. Add the portion of milk, which has had the Brewer’s yeast dissolved in it, to the margarine/ flour/egg/zest/sugar mixture. a. Combine by pulling from the underneath/back of the bowl until you have a single body of dough. 9. To work the dough you should use your hands as paddles to scoop under the dough, stretch the dough apart to create an indentation in the underside of the dough and then let the dough fall to your clean working surface so that the dough closes like a balloon. a. As the dough becomes dry/less sticky wash your hands in the remaining milk and rub over dough ball. b. Continue working the dough in this way for 1-2 hours until the dough becomes smooth with a satin/shiny texture. 10. Allow dough to rise for 1.5 hours or until doubled. 11. While the dough is rising, prepare baking trays with parchment paper and heat the oven to 180°C. 12. Pull handfuls of dough from the bowl and create a fist so that dough bubbles out from between your index finger and thumb. Cut the bubble off with a butter knife, so that it falls onto the parchment paper. a. Repeat this process until all the dough has been used. b. Allow the balls of dough to rise until they become about the size of a tennis ball which has been cut in half. 13. Bake for 10 minutes or until golden brown on top. a. Pierce the center with a toothpick to check them; the toothpick will come out clean if they are done and doughy if they are not. 14. Divide into matching couples. 15. Pour sugar onto a plate, put a spoon or spoons into the peach jam and pour the Alchermes into a container big enough to dip the Pesche buns into. 16. Finish the Pesche by dipping the couples into the Alchermes, spreading peach jam on the flat side of one of buns and finish by rolling in sugar. Eat! |

· 1 chilo Farina · 100 grammi di zucchero + un po 'per la decorazione. · ½ litro Latte · 100 grammi di Margarina · 50 grammi di lievito fresco · 2 Vanillina in bustina · scorza di 1 limone · scorza di 1 arancia · 4 uova · 16g lievito in polvere · 1 bottiglia di Alchermes · ½ litro di marmellata di pesche Preparazione: 1. Pesare 1 chilo di farina. a. Aggiungere la vanilina e il lievito alla farina. 2. Scaldare il latte a fuoco basso. 3. Sbriciolare il lievito fresco in una ciotola. a. Versare il latte sopra il lievito fino a coprirlo un poco. b. Girare la miscela per far sciogliere il lievito nel latte. 4. Scaldare il burro a fuoco basso ad ottenere la consistenza di una crema. 5. Mescolare le uova, le scorze, e lo zucchero. 6. Versare la farina su un piano da lavoro, fare una fontanella al centro della farina e versare l'uovo/le scorza/zucchero in esso. a. Lavorare il composto avendo cura di prelevare l’impasto sempre dal fondo della terrina che state utilizzando. 7. Aggiungere la margarina al mix di farina/uova/scorza/zucchero. a. Unire la miscela tirando da sotto / retro della vasca. 8. Aggiungere la porzione di latte, che ha avuto il lievito frescosciolto in essa, alla miscela margarina/farina/uovo/scorza/ zucchero. a. Combina tirando da sotto / retro della ciotola fino ad ottenere un impasto omogeneo. 9. Lavorare l'impasto con le mani, utilizzandole come se fossero delle pale che raccolgono la pasta dal fondo della pasta. Sollevare l’impasto con le mani con un movimento rapido e contemporaneamente cercare di aprirla come se voleste farla diventare paracadute e poi lasciarla cadere. a. Per evitare che la pasta si asciughi, lavarsi le mani nel latte rimanente e ungere con il latte che avete sulle mani la pasta sulla sua superficie. b. Continuare a lavorare l'impasto in questo modo, per 1-2 ore fino a quando la pasta diventa liscia e lucida. 10. Lasciare lievitare per 1 ora e mezza o fino al suo raddoppio. 11. Mentre l'impasto lievita, preparare teglie con carta da forno e scaldare il forno a 180°c/355°f. 12. Con la mano prendere l’impasto (circa una manciata) e schiacciare il pugno in maniera da farne fuoriuscire una pallina. Tagliare la bolla con un coltello, o con l’altra mano, in modo che cada sulla carta forno. a. Ripetere l'operazione per fino ad utilizzare tutto l’impasto. b. Lasciare che le palline aumentino di volume fino a farle diventare delle dimensioni di una palla da tennis, tagliata a metà. 13. Cuocere in forno per 10 minuti o fino a doratura sulla parte superiore. a. Bucare il centro con uno stuzzicadenti, se lo stuzzicadenti esce pulito, la cottura è ultimata, mentre se lo stuzzicadenti trattiene parte della pasta, infornare nuovamente ed aspettate. 14. Dividere in coppie corrispondenti. 15. Versate lo zucchero su un piatto, mettere la confettura di pesche in un altro recipiente e versare l’Alchermes in un recipiente abbastanza grande per immergere i panini. 16. Bagnare le 2 pagnotte nell’Alchermes, distribuisci la marmellata di pesche sul lato piatto di uno di esso , unisci le due parti e finisci facendo rotolare la pesca così composta nello zucchero .
