Ingredients:
· 1kg Flour + some for dusting working surfaces and tools · 8 egg yolks · 400g Sugar · 400g Butter · 32g Baking powder · 32g Vanilla flavor · Zest of 2 lemons · 350g of Peach or Cherry jam · ½ cup of Villacidro Liquor (substitute with Limoncello) · Icing sugar for dusting Procedure: 1. Pour flour onto working surface and create a well in its center. a. Drop eggs and extra yolks into the center of the well. b. Add butter in pieces to the flour/eggs and combine using your hands. c. Add sugar, lemon zest, vanilla flavor and baking powder to dough. d. Add 2 tbsp of Villacidro Liquor to the dough and work dough until homogeneous. 2. Mold into a large ball, place into a bowl and cover with plastic wrap. a. Allow to rest in the fridge for a minimum of 10 minutes and up to a day. 3. Dust working surface, rolling pin and cookie cutters with flour. 4. Roll portions of dough 3-4mm thick. 5. Cut equal numbers of small and large flowers out of the dough; also cut holes out of the center of the small flowers. a. Repeat until dough has been completely turned into cookie shapes. 6. Bake the first batch of cookies in the oven at 180°C for 20 minutes or until golden brown on top. a. Bake following batches of cookies for 15minutes or until golden brown on top. 7. Mix jam with 2tbsp of Villacidro Liquor. 8. After the large cookies have been removed from the oven place ½ tsp of jam in the center of each large cookie. a. Center the smaller cookie on the bigger cookie, using the jam as glue. b. Repeat until all cookies are joined. 9. Dust all of the Ciambelle with icing sugar. |
Ingredienti:
· 1 Chilo di farina (acquistare piu farina) · 8 Uova · 400 Grammi di zucchero · 400 Grammi di burro · 2 Lievito in bustina · 2 Vanillina in bustina · 2 Limoni (solo la buccia grattugiata) · 350 Grammi marmellata di pesche o di ciliegia · Liquore q.b. (circa ½ tazzina) · Zucchero a velo per spolverare Procedimento: 1. Versare la farina su un piano da lavoro, fare una fontanella al centro della farina. a. Versare dentro, 6 rossi d’uovo e 2 uova intere. b. Aggiungere lo zucchero, la vanillina, il lievito e la buccia di limone grattuggiata. c. Aggiungere il burro morbido tagliato a pezzi, lavorare un po (circa 3 minuti fino a raccogliere gli ingredienti). d. Aggiungere il liquore, lavorare l'impasto fino a renderlo omogeneo (non lavorare troppo la pasta). 2. Avvolgere la pasta con un telo pulito e mettere in frigorifero per circa 15 minuti. 3. Togliere la pasta da frigo. 4. Mettere un po’ di farina in un piatto, approntare il matterello per spianare la pasta e le formine sul piano da lavoro. 5. Stendere un velo (un po’) di farina sul piano di lavoro. 6. Tagliare un pezzo di pasta, premere con il palmo delle mani, schiacciandolo. 7. Spolverare il matterello di farina e spianare la pasta, fino ad ottenere uno spessore di circa 3-4 mm. 8. Con le formine, fare delle ciambelle grandi e piccole in numero pari. 9. Preparare le teglie ricoprendole con della carta forno, disporre le ciambelle distanti l’una dall'altra. 10. Preriscaldare il forno a 180°c/350°f e infornare. a. Tempo di cottura 20 minuti circa. 11. Per la decorazione: a. Disporre le ciambelle cotte sul piano da lavoro b. Con un cucchiaino mettere al centro del biscotto grande un po’ di marmellata e coprire con il biscotto più piccolo. Al termine spolverate la ciambella così costituita con lo zucchero a velo. c. Spolverare con lo zucchero a velo. |
